I created this simple marinade recipe when I lived in Australia by using spices I had in my kitchen at that time, and the result was great! My partner loves it so much, and most importantly it is healthy and easy to prepare. The BBQ chicken can be an option for your sandwiches or burgers filling too.

Bbq chicken marinade ingredients:

  • 2 chicken breast fillets (slice each of them into two even pieces or about 1 cm thick)
  • 1 tsp salt
  • 1 tbsp garlic powder or 1 tsp fresh grated garlic
  • 1 tbsp chilli/cayenne powder
  • 1 tsp thyme
  • 1/2 tsp ground black pepper
  • 1 tsp honey
  • 1 1/2 tbsp white vinegar

Method:

  • Marinate all the ingredients with the chicken fillets, then put into the fridge for two hours.
  • Grill the marinated chicken on the grill pan without any oil until it’s completely cooked.

Salad ingredients:

  • A pack of 125 g baby rocket
  • 1 cup (125 g) quinoa (cook with a cup of water for 10-15 minutes)
  • 1/2 onion (better with red onion)
  • cherry tomatoes (as much as you like)
  • Sweet kernel corn (optional)

Mix all the ingredients.

Dressing Ingredients:

  • 1 tsp freshly squeezed lemon juice
  • 1/4 tsp table salt
  • 1/2 tsp ground black pepper
  • 1 tsp honey
  • 2 tsp olive oil

Combine all the dressing ingredients, add it into the salad and mix it well. Serve it with the barbecue chicken. Tasty and very good for your diet!
