Seeded Rye Bread Recipe

Today I would like to share my style of fitness bread. It is not as hard as you might think. Give it a try!

  • 125 g rye flour
  • 325 g plain flour
  • 1 1/2 tbsp honey
  • 1 1/2 tbsp instant yeast
  • 250 ml milk (lukewarm)
  • 110 ml water
  • 1/2 tbsp salt
  • 1 1/2 tbsp olive oil
  • 2 tbsp flaxseeds
  • 3 tbsp sunflower seeds


Add instant yeast and honey into the lukewarm milk, stir it well and leave it for 15 minutes.

Combine rye flour and plain flour in a container, add the yeast mixture and water into the flour, knead it for about 10 minutes.

Add salt and olive oil, mix it again for another 10-15 minutes until it becomes a soft and elastic dough. Add flaxseeds and sunflower seeds, combine it well.  Cover the dough with cling wrap or damp cloth and leave it for about an hour or until it doubles in size.

Punch down the dough, move it into a greased loaf pan. Spray the dough with a water and sprinkle pumpkin seeds on it. If you like the seeds to stick stronger on the bread, instead of spraying water, egg wash is another option. Leave it for another hour (it should double in size).

Bake it in preheated oven in 200 degrees Celsius for 30-40 minutes. Tap the bottom of the loaf when you take it out, the bread will sound hollow when its ready.
