Macarons are meringue based cookies. The main ingredients are almond meal/almond flour, sugar and egg whites. Macaron and macaroon are two different types of cookies. Quite many people still mix up these two. As I mentioned earlier, macaron is meringue based, with almond meal folded into meringue. It is known as sandwich cookies, with filling of buttercream, ganache or fruit jam. The filling acts as glue, sticking the 2 macaron shells together. Macarons can be made colourful with many options of flavours, and it has delicate texture. While for macaroon, shredded coconut is folded into meringue. It has dense texture and is crumbly.
